Sweet Cucumber Relish

This is the recipe I’m using this year for sweet cucumber relish, with some modifications.

Here is the recipe with my modifications –

SWEET CUCUMBER PICKLE OR RELISH
2 c. lime
1 gal. water
7 lb. cucumbers
2 qt. vinegar
10 c. sugar
1 tbsp. salt
1 tbsp. celery seed

Soak cucumber chips in lime and water for 24 hours. Rinse the lime off and soak in clear water 3 hours. Rinse and soak 12 hours in the sugar, vinegar, and celery seeds. Boil the cucumbers in this solution for 45 minutes. Pack the hot pickle into hot jars and seal. If you want to make relish split the cucumbers into fourths or eighths lengthwise. This makes the soaking the rinsing easier. Grind the cucumbers before the syrup soak and cooking steps.

I didn’t add any food coloring in my first batch. I’m thinking about adding a little bit of liquid chlorophyll to my next batch to give it some color. It does tend to be almost white if nothing is added for color.

Drop of green coloring

Soak cucumber chips in lime and water for 24 hours. Rinse the lime off and soak in clear water 3 hours. Rinse and soak 12 hours in the sugar and vinegar. Tie the spices in a cloth bag and place it with the soak also. Boil the cucumbers in this vinegar syrup and spice solution 45 minutes. Pack the hot pickle into hot jars and seal. If you want to make relish split the cucumbers into fourths or eighths lengthwise. This makes the soaking the rinsing easier. Grind the cucumbers before the syrup soak and cooking steps.
